Mackerel Pasta


In one of those rare moments, we found our ref bereft of any substantial meat, fish, or veggies to cook for dinner.  We somehow forgot to do our groceries.  But as they say, hunger is the mother of invention, and so I raided the pantry to see what we can come up with.

I found a big can of mackerel, some elbow macaroni, and shell pasta.  For sauce, I found a bit of tomato paste, and we have a big bottle of ketchup.  So Mackerel Pasta it was for dinner!  The result was surprisingly delicious.  Even my son loved it!


Ingredients:
4 cloves garlic, crushed and chopped
1 medium onion, chopped
1 medium tomato, seeds removed, chopped
425g canned mackerel, drained
50g tomato paste
200g pasta
enough ketchup to flavour the mackerel
salt and pepper
sugar (if ketchup and tomato paste combo is too sour for you)
cooking oil
cheddar cheese


Procedure:
Cook pasta as per package instructions.
Heat up some cooking oil over medium heat.  Fry up the onion, garlic, and tomato for a couple of minutes.
Add the mackerel pieces and mash into smaller pieces while mixing with the spices.


Add the tomato paste and ketchup.  Mix, then season with salt and pepper.
Taste.  If too sour for your taste, sprinkle some sugar to adjust.
Your pasta would have already cooked by the time you're done with the mackerel.  Drain the pasta but leave a little of the water with it.

Mix the mackerel with the pasta.

Add grated cheese and mix.  The heat will melt the cheese.  Add some more cheese as topping before serving.
