Pasta in white sauce

We were amazed at how our friend Jeanette was able to whip up this dish in record time for dinner in their wonderful home. My wife was quite impressed by the ease by which this was cooked, and the outcome is a winner. So we made a batch for a gathering and was, as expected, a hit.

The sauce is thick and chunky, so you will need pasta that can scoop it up like the bow ties, the spirals, or the shells. In our case, we found that spirals work really well.

Yield: for a party of 12



Ingredients
  • 1 can Spam, chopped up into little cubes
  • 2 small or 1 medium onion
  • half a head garlic
  • 500 grams pasta (spirelli)
  • 10-12 pieces button mushrooms, thinly sliced
  • 420 grams Cream of Mushroom
  • 250 ml Reduced cream
  • as needed cheddar cheese
  • to taste salt and pepper
  • 2 tbsp cooking oil
  • to taste cheddar cheese
Cooking Directions

  1. Prepare the pasta as per package instructions.
  2. Heat up the cooking oil over medium heat.
  3. Saute the onion and garlic
  4. Add the Spam and mix. Cook for around 3 minutes.
  5. Add the button mushroom and cook for a couple more minutes
  6. Pour in the reduced cream and the cream of mushroom. Stir the ingredients together.
  7. Let the sauce boil then simmer for a couple of minutes while stirring occasionally.
  8. Grate some cheese and stir through.
  9. Taste the sauce, and season with salt and pepper if needed.
  10. Pour onto the cooked pasta and gently combine.

  11. Grate some more cheese on top to finish.  Serve warm.
